Dairy and Soy Free Challah French Toast

Since I’m on a dairy free diet (going on four months now…not fun, but getting easier), I have to experiment with making my favorite foods in ways that I can actually eat them that won’t cause Monkey to be up all night in pain.  We’re actually toying with the idea of introducing dairy again to see if Monkey’s system is still sensitive, but I think we’ll wait until he’s 5 months.

I saw Challah bread at the local health food store, and immediately got a craving for french toast. I first discovered Challah bread in college. I often forget about it, but oh man is it good. So, when I re-discover it, I get so excited.

The great thing about Challah bread is that it’s made with mostly water, flour, and eggs so no need to worry about dairy or soy! (Although check the ingredients if you buy some, just to make sure.)

So, on Sunday, I made Challah french toast for the husband and I for breakfast. Yum. In fact, looking at these pictures, I’m craving it again.

Ingredients:

+ 1 Loaf Organic Challah bread (make your own if you’re in the mood!)

+ Oil for frying (or Earth Balance if you prefer)

+ 5 Eggs

+ 1 Cup Organic Rice Milk (Or Almond or Hemp)

+ 1 Teaspoon Vanilla Extract

+ 1 Tablespoon of Organic Honey

+ 1/4 Teaspoon Cinnamon

+ Organic Maple Syrup or Honey

+ Fresh Fruit (optional)

Directions:

1. Preheat oven to 200 degrees. Stick baking sheet in oven. (Will be used to keep toast warm as you cook.)

2. Slice Challah bread into slices (About 1 inch thick.)

3. Beat eggs in mixing bowl.

4. Add rice milk, vanilla extract, honey, and cinnamon to eggs. Mix thoroughly.

5. Heat oil or Earth Balance in skillet or frying pan on medium-high heat until water droplets sizzle.

6. Dip slices of Challah bread into egg mixture to fully saturate (one at a time.) Let excess drip off, then stick on skillet/pan. Your bread should sizzle; if it doesn’t, your skillet/pan wasn’t hot enough just yet.

7. Cook slices of toast 3 minutes on each side. As slices finish cooking, move to baking sheet in pre-heated oven to keep warm.

8. Once all slices are finished cooking, top with maple syrup or honey and your fresh fruit of choice! Enjoy!
